I just opened up the last London node with available space on it this morning which is a sign that this sale may be coming to a close fairly soon based on the current daily order volume.
I've also been put on the lone E3-1270 v5 node, but my disk speeds are much lower than yours. I'm going to give it a few days to see if things settle, although there doesn't seem to be much CPU steal to begin with.

Due to a provisioning issue to many people got put on 1 particular node, I believe it was a v5 (there are 3 of them now actually) I am actively working to resolve it but if it is not at acceptable speeds in a few days please feel freer to open a ticket for help/migration, you might end up on another E3-1270v5 node but it will be must less densely populated (good old SolusVM)
The real-world difference between a v5 and v6 is near nothing.

Oh, missed this thread entirely, would have taken that 45 EUR plan for the 4GB ram. Currently considering just setting up my own DA panel for my personal sites instead of using cPanel at Hostmantis. Never mind. I do have another VPS with IH but not enough ram.
Tip: Install any OS via template first if you use a host that also uses the solusvm control panel.
This (if the host has set things up correctly) will automatically enable CPU passthrough and optimal driver sets), you can then install via ISO and keep all the optimal settings perminantly.
It is a limitation of SolusVM (reported long ago and many times) that it is not possible to set CPU passthrough as standard for ISO installations.
I agree it is ridiculous but it is what it is, for the sake of clicking reinstall > centos 7 > confirm, then power off and install from ISO you can save yourself any time requesting it in the future for new servers.

if you see the cpu model and it’s not enabled then yes, if you see qemu cpu as the model then you should open a ticket
