I don't know for how long you're already trying to sell this server but I cannot find any good use case for it that reasons the price, thus I'd be surprised if you hand it over to anybody anytime soon.

Since this is a migration away from ESXI, I wouldn't expect too much trouble with ESXi. Hyper-V can be a beast too so, difficult but as long as it's migration only it should be manageable.

Did you consider InvoiceNinja? Was using it a couple years ago (self hosted) and it did everything required. If you plan to manage multiple brands with multiple employees, maybe consider SAP, they're having a startup tier.
